happy fourth – dessert table

hi there! i am melissa, the writer and mama behind, my pb+j. the pb to my j are: my daughter (payton), my son (brayden) and my sweet hubby (james).  thanks for taking the time to stop by my blog for the red, white and YOU july follower-fest! 

i am a dessert’s kind of gal. anyone who truly knows me gets this. i usually get requests for my red velvet, which is hands down the best red velvet cake i have ever eaten, ask around. the second thing i love to bake is a good cheesecake. in terms of creating a memorable dessert table for any event always have options. some people don’t like chocolate, some can’t have refined sugar. this independence day or even thinking ahead to labor day you could add any of these to your party to leave a great impression.

look around your local craft stores when holiday items first arrive to find cute bake ware items like these foil pinwheels. i actually bought these three years ago at Michael’s and just used them. 

fresh blueberry new york cheesecake.
 easiest, full proof cheesecake recipe i have ever made. you can find the recipe for the cake here. the blueberry topping is as follows:
in a saucepan heat the following:
1 pint of fresh, rinsed blueberries
1/2 cup sugar
2 TB butter
1 tsp grated lemon rind
1/4 of a granny smith apple, finely diced 
1 TB cornstarch 
stir all the ingredients to coat the blueberries. as the butter begins to melt the cornstarch will start to dissolve. bring to a rolling boil and then remove from heat. let blueberries cool slightly and then move to the refrigerator to cool. top on cooled cheesecake. 
mini semi-homemade cherry pies. 
i used refrigerator pie crust, cut circles larger than my muffin tin (i used a sour cream container lid), filled each cavity 3/4 full with canned cherry pie filling, and then cut out stars to place on top. bake until crust is slightly browned. 

fruit skewers
i used watermelon cut into discs and then simply took my medium sized star cookie cutter. hull your strawberries and rinse blueberries. when skewering, start with a blueberry to anchor the weight of the remaining fruit. layer however you desire. i took a flower vase, placed blueberries on the bottom and them placed a disc of watermelon to arrange the skewers.

    Yum! I am drooling over them all! I think the cheesecake might be my favorite for what I’d eat the most of! Ha!! I love those skewers! What a fun idea!! And those little pies are adorable! You are just full of great yummy ideas!

    My house isn’t even that clean and I don’t have kids! I have some mommy friends who can’t even get out of their PJs. And then there’s you. Amazing, beautiful, baking, entertaining, blogging mama.

    It’s not just the food, it’s the presentation. Just, wow!
