caramelized onion & roasted pepper crisp {recipe}

i am on a kick this week with easy, flavorful meals. this meal could easily be transformed into a savory appetizer for a warm summer evening or paired with a warm bowl of soup in the fall. give it a try.

here’s what you need:

one sheet of puff pastry
3/4 cup crumbled blue cheese
caramelized onions, i like this recipe
1/4 cup roasted bell peppers, sliced
1 cup micro greens

here’s how:

remove the sheet of puff pastry from the box and thaw for forty minutes. unfold the pastry and cut along the fold lines. place pastry onto a greased baking sheet and poke holes along the pastry. preheat oven to 400 degrees and bake for 15 minutes. 

while your pastry is doing it’s thang, caramelize those onions. 

 remove pastry from oven and immediately place blue cheese onto the pastry. 
place the pastry back into warm oven for five minutes to melt the cheese slightly. 

top with onions. 
top with peppers. 

and then the greens. 

cut into squares and enjoy.

strawberry quinoa salad

over the weekend i was planning our weekly meal plan and i stumbled upon love and lemons. not only is this a gorgeously designed blog but the husband/wife duo make beautiful, healthy food. i think i read the entire blog while originally searching for one recipe, the good thing is, i came out with several others that made it to our menu this week. meet jeanine and jack’s, strawberry quinoa salad. 

this salad is refreshingly light with toasty notes. it’s definitely going to hang around here for a weekly appearance over the summer.

summer corn cakes

summer corn is a favorite around here. my daughter and husband can eat several each so when our local farmers market has them on sale i tend to stock-up. this recipe came into fruition because we had a lot of corn leftover from our fourth of july barbeque. i had plans on making a great corn, avocado and tomato salad but instead i stumbled upon this recipe on pinterest and i am so happy i did! it was relatively quick, fresh and light. a perfect summer meal.

* i promise one day i will find my DSLR battery charger so i don’t always post phone pictures.

chunky monkey pie

  • last week i mentioned that i made a chunky monkey pie for our sunday barbeque. this pie was inspired by our best bites. what’s better than: honey roasted peanut butter, fresh bananas, oreo crust and fresh whipped cream? this flavor combo is actually one of my favs and i usually get the fix when we dine at the corvette diner in the form of the elvis shake. i had the intentions on following the recipe 100% but i didn’t read the step that said combine pudding mix and water, i had already combined the mix and two cups of milk. oops! i followed the recipe after that skipping the condensed milk. it still came out fab, i believe the missed step would have made the pie a little less jiggly but nobody noticed and it tasted like a pillowy dream of bananas, peanut butter and fluffy whipped cream. if you’re throwing a summer get together and need something quick i highly recommend this pie, it seriously took me less than ten minutes. get on it people!

here we go ’round the mulberry bush {a recipe}

over the weekend we walked on over to our neighbor’s house, the aunt and uncle’s, and walked around the property looking at all of uncle al’s fruit trees. i had never been on one part of the property, which was weird after knowing them for twelve years and living there for three. there is absolutely every fruit tree you could imagine: papaya, tangelos, cherry, avocado, guava, banana and almonds just to name a few. but the really cool thing is that they have three mulberry trees. the largest one sits right as you enter their driveway but it’s a fruitless mulberry, hence, why i never thought mulberries ever existed until yesterday! when we walked around the front side yard we saw the fruit filled mulberry tree, and no, i did not trot around humming the childhood song. i was in awe, the fruit looked like colorful caterpillars hanging from the branch. the fruit tastes like a cross between a plum, blackberry and a fig, it was like nothing i had ever eaten before. uncle al and aunt kathy had picked all the ripe fruit earlier and had prepared it for grandmom phyllis and i to bake a pie. so that’s what we did and then we waited and waited for it to bake. it was heaven on earth, hands down the best pie i have eaten in a long time.

we used this recipe. we omitted the cinnamon and i added in the zest of one lemon. we skipped the homemade crust and used store bought. when rest of the fruit is ripe i plan on trying it with fresh cherries or even apples. 

after one hour this was the finished product. one bite in and al and i decided it needed ice cream, he ran off to the store. we were the only two that waited. even better. 

ugh. i wish i ate two slices. delish! if you can track down a mulberry tree with fruit make a pie, it will make your day!
