A Nutcracker, Sugarplum Fairy Celebration

Last month my sweet Payton turned six on the eighteenth of December. To celebrate her big day we invited all her girlfriends from school to swirl around in fluffy pink tutus to the dance of the Sugar Plum Fairy. When I was day dreaming of the party I saw lots of sweet pastel candy, cotton candy colored tutus, butterfly wings and silvery white Nutcrackers all around. We held the party at our home, we setup the table up outside because we were lucky enough to miss the rain by a few hours.  The food was simple: fruit, fairy bread, sandwiches and pink lemonade. I baked the barbie cake and cupcakes. We had a special visit from the Sugar Plum Fairy who performed for everyone and then taught a one-hour class and gave glittery tattoos to all the girls. It was truly magical!

Like most families we are always on-the-go. Last September we made a lifestyle change and started working out together vs. going our separate ways. Back-to-School Chocolate Cake

My baby starts Kindergarten today. It’s that date you countdown to when you first give birth, it’s the huge milestone each parent looks forward to. The only thing is, once it’s here it’s really scary and exciting all at the same time. To celebrate our daughter beginning Kinder we wanted to celebrate this milestone to help ease her anxiety and to show her we are proud of the young lady she is becoming. We celebrated at her favorite restaurant, gave her a few new books and I baked her one amazing chocolate cake. While I was at Target buying school supplies I noticed a new product in the baking aisle. It’s a new cake mix from Pillsbury Purely Simple that is free of dyes, has no preservatives and no artificial flavors. There is also Pillsbury Purely Simple Frosting, Pillsbury Purely Simple Cookie and Pillsbury Purely Simple Brownie Mix. I immediately thought of a decadent, yet simple chocolate cake recipe I could bake for my sweet girl to celebrate this milestone.

I know that this cake might look super complicated, but I have to reassure you that it took me less than two hours from start to finish. You do not need to be an expert baker to create a memorable and tasty cake. I started with Pillsbury Purely Simple Chocolate Cake Mix, all you have to do is add: milk, eggs and butter. While the cake was baking I had the kids help with baking the Pillsbury Purely Simple Chocolate Chip Cookies and Pillsbury Purely Simple Brownies. These mixes were also simple and came together very fast and within no time I had everything baked. To speed up the cake cooling time I moved the warm cake to the refrigerator and prepared the frosting. My friends always want to know my baking secrets and I have to tell you that using mixes is easier, time saving and usually you cannot tell the difference in taste. This new product does not have that aftertaste that some boxed mixes have and by using simple ingredients like butter, milk & eggs it’s like you baked it from scratch but didn’t have to do any of the measuring yourself.

Ingredients
  • 1 box Pillsbury Purely Simple Chocolate Cake Mix
  • 3 eggs
  • 1 stick butter
  • 1 cup milk
  • 2 bags Pillsbury Purely Simple Vanilla Buttercream Mix
  • 2 sticks butter
  • ½ cup water
  • 1 tsp almond extract
  • ½ cup fresh raspberries, smashed.
  • Pillsbury Purely Simple Chocolate Chip Cookies (baked according to package)
  • Pillsbury Purely Simple Brownies (baked according to package)
Instructions
  1. Preheat oven to 350º.
  2. Grease two 6" cake pans and dust with cocoa powder
  3. Prepare cake mix according to package instructions.
  4. Divide batter evenly between the two pans. Bake for 30 minutes or until a toothpick comes out clean.
  5. Cool cake and invert. Cut each cake in half and remove the top of the cake to create an even surface.
  6. In the bowl of a stand mixer, combine Purely Simple Buttercream Mix and butter. Combine.
  7. Add in water and extract. Mix on high until light and fluffy. *I added a little extra powdered sugar to create a thicker consistency to pipe.
  8. Place frosting in piping bag fitted with tip of choice.
  9. Layer your sliced cake with even layer of frosting. On second layer spread smashed raspberries on top of frosting.
  10. Apply a thin crumb coat to the cake and place in refrigerator for ten minutes.
  11. Pipe frosting and top with brownies & crushed cookie pieces.

Mickey’s Halloween Party – 5 Reason’s Why You Need to Go!

If you follow me on instagram you know that we go to Disneyland a lot! If there’s something else you know about me is that I love Halloween almost more than any other holiday. Halloween time at Disneyland is one of my favorites and I have been counting down since our visit last year to go back to Mickey’s not so scary Halloween party. The good news is that tickets are on sale and they will sell out, don’t wait! I waited last year and after one day three different dates sold out. The event ranges from $69-$84. You might think it’s crazy but it’s really worth it! If you don’t have an annual passport you can arrive at the park three hours before the event’s start time and it includes parking. This year we are making a weekend out of the event by staying at The Disneyland Hotel to celebrate Brayden’s 4th Birthday. Here are a few reason’s why you’ll love the special event:

1. Treats. I mean seriously, the treats are freaking insane. I would say that you could probably skip going trick-or-treating on Halloween and just go for the fun treats at Disneyland. We are a family of four and we skipped a few trick-or-treat stations and we still had way too many treats. When you go through the main gates they will give you a treat bag for each guest. My suggestion is to bring larger bags to dump the treats into. This year my goal is to go mainly for the healthy treats because our kids love the dried apples (and the frozen apple juice next to Casey Junior, it’s a must for every visit!) and it’s one treat I always stock-up on when we go to the park anyway. They also make for great snacks to send to school as a special treat!

2. Costumes. I could go and sit on a bench and just people watch. I have been brainstorming our family costumes since last year and I can tell you it’s already August and I have no clue. It’s amazing to see the adults get so into the fun. Some costumes are mediocre and some are so extraordinary that you might confuse a guest as a cast member. Tip: When you’re dressing your little ones add some glow sticks to the mix. Last year Payton went as one of 1,000 Elsa’s. She wore Twinkle Toes which added some icey flair and we could always see where she was because of her lights. The park is super dark and it’s crowded so add something to identify your child quickly. If you have a Tinker Bell, add glow sticks into the skirt or make the wings light up.

3. Special Shows & Attractions. I love Disney Villans but sadly we don’t see them throughout the year. You’ll see Jack Skellington, Cruella Deville, Ursula and many others scattered around the park. You will also see your favorite characters dressed up as well. You won’t want to miss the Haunted Mansion or Space Mountain’s ghostly surprises. You’ll love the Villain fireworks show, I was seriously blown away and loved every second because all the evilest Disney characters make a bootiful appearance. Our kids had fallen asleep about an hour before close so we could really take in all that the party had to offer. I must say my favorite part was watching all the Villains saying goodnight and going away into the Disneyland Railroad.

Big Thunder Ranch is always a secret gem. It’s back away from the crowds and there’s always a lot of characters rotating through. There’s also cookie decorating, dancing and more fun. Overall, it’s a good place to take a break.

 

4. Value. I know value and Disney don’t seem like they would go together in the same sentence but if you truly plan a trip you can save. Last year we went and only had to pay for three vs. four and we went on a Wednesday which was less than Friday or closer dates to Halloween. Since we went after we picked the kids up from preschool we stopped on the way up for dinner and only had a snack at the park. You’re also saving on parking because your party ticket includes parking. If you utilize the healthy treats from the treat stations you can really make it work for an evening with minimal spending. The biggest value for us last year and even this upcoming is that we stayed on property. Last year we did the Grand Californian and this year we are staying at The Disneyland Hotel per the almost four-year-old’s request. It is crazy how tired you are stumbling back to your room with sleeping kids in tow! It was really worth it because we weren’t trying to change them in the car or making the hour plus drive home.

5. The Photo Opportunities. Halloween is my favorite time at Disneyland, well that and Christmas but there’s just something so amazing about the Mickey pumpkin as you walk-in. I have loved taking our photo there ever since my nieces and nephew were babies.

Banana Bread French Toast with #QuakerRealMedleys

Three of the four members of my family are not morning people. The kids and I like to sleep in and usually that leaves us in a scramble when trying to leave the house. With Payton beginning Kindergarten in just a few weeks we have been working on waking up earlier and eating a wholesome meal before we rush out the door. I have been experimenting with fun breakfast ideas that can either be made beforehand or can come together relatively quickly. Recently I was shopping in the cold cereal aisle at Walmart and noticed the new Quaker® Real Medleys® Yogurt Cups, it’s a delicious blend of yogurt and multigrain granola with real fruit and crunchy nuts. A new recipe sparked and I thought that I could make a simple breakfast into something amazing by adding the Quaker® Real Medleys® Yogurt Cups with Strawberry Almond.

Like I said, my husband is a morning person and he also bakes amazing banana bread. He had just made a fresh loaf the night before so I decided to make french toast out of the bread and top it off with the Quaker® Real Medleys® Yogurt Cups and fresh fruit. This is the first shelf-stable convergence of granola, fruit and yogurt – all in a single serve cup! Plus, it only takes two minutes to activate with cold milk.

Ingredients
  • Your favorite banana bread recipe
  • 3 eggs
  • ½ cup milk
  • 1 tsp cinnamon
  • 1 TB butter
  • 1 Quaker® Real Medleys® Yogurt Cups - Strawberry Almond
  • Strawberries
  • Bananas
  • Blueberries
Instructions
  1. Slice banana bread into ½" slices
  2. In a pie dish, mix together eggs, milk and cinnamon.
  3. Butter a griddle pan.
  4. Dip slices of banana bread into egg wash. Make sure not to soak bread too long because it will fall apart.
  5. Place soaked bread on hot griddle. Cook on both sides until golden brown.
  6. Prepare Quaker® Real Medleys® Yogurt Cups as directed.
  7. Spoon Quaker® Real Medleys® Yogurt on top of bread.
  8. Top with fresh fruit & enjoy.
