Autumn Inspired Salad with Pear Vinaigrette {paleo, clean eating & yummy!}

If you know me well enough you know that there is one meal a day I love going out for, lunch! It’s a time where the kiddos and I get to spend some time together, eat some yummy food and get out of the house. I would always stick to my guns when we were working on our budget, too stubborn to give up my coffee trips and lunch dates. That was until we began The 30 Clean program. During the first few days I was itching to get out for lunch but by day six the thought of eating out didn’t sound appealing at all. I was craving whole foods made by me, that in itself is a goal achieved from this challenge. 
To help recreate some salads I would typically order while dining out I came up with an Autumn inspired salad with a homemade pear vinaigrette. The salad has a colorful plate of: roasted purple sweet potatoes, bright orange yams, crimson pomegranate perils, plump blueberries, crunchy toasted pecans and roasted chicken. Eating this salad in complete silence as the hubby worked and the baby slept made it that much sweeter! Not to mention I felt like I was rewarding my body with yummy whole foods and preservative free! 
On Sundays I prep a lot of our food, like sweet potatoes and chicken. Adjust the amount of toppings based on how many salads you’re making. 
Ingredients: 
baby mixed greens
roasted purple sweet potato, diced 
roasted yams, diced 
pomegranate perils 
roasted chicken, diced 
raw whole pecans, toasted 
blueberries 
Pear Vinaigrette:
1 whole pear, diced 
2 TB Bragg’s apple cider vinegar 
1 TB olive oil 
salt & pepper to taste 
In a blender emulsify the pear, vinegar and oil. Season with salt and pepper. Dress greens prior to topping with ingredients. Enjoy!

new year, clean eating & new goals

Last year was like living inside a tornado. Every time I thought I would escape that spinning vortex I would get sucked right back in. I couldn’t seem to balance my life. I went back to work after taking two years off, I had continued weight loss goals, my husband left his job at UPS after eight years to take a job where he now works from home and travels less, our daughter began her first year of preschool, I seemed to be working more, the house in my eyes was always a disaster, the kids would cry if I told them I had to work, we were eating out more, I was working out less, my blog was forgotten, friends would inquire why I was always MIA and I beat myself up a lot, mentally not physically of course!

 But out of all that so-called “bad”, which wasn’t really bad at all, we became happier as a family. We managed to pay off my car, my debt will be completely gone in a few short months, Jim’s car will be paid off in a few months, student loans are starting to dwindle (not mine, that will take a lifetime), I went gluten-free in September, I managed my 2012 weight loss of thirty pounds and added nine additional pounds lost in 2013. While my social life might have sucked a little (okay, a lot!) we had to make sacrifices in 2013.

2014 is already looking brighter. On New Year’s Day it felt like that looming aftermath of that tornado’s dust had cleared. We have several family goals set, we started cleaning out closets, ridding our house of unneeded toys and food. I had never felt so good going into the New Year (despite the on-going cold we’ve all had).

Sixteen days ago we started a challenge as a family, this challenge is to follow The 30 Clean program. I’ve already been gluten-free for four months so following a clean eating plan just seemed like a great thing to do for the New Year. Along with the program I am challenging myself to take 15 classes at TDM. This might be the most challenging part of the 30-days since I had a rough ending to ’13 with my knee and illnesses.

I cannot wait to see what 2014 brings.

the best cookie you’ll ever eat. period.

If you are looking for a cookie recipe to wow the socks off of your friends look no further. The first time I ate this cookie was in NYC with my bestaaay shortly after we arrived in the city. I had been dreaming about them since that hot Summer day. So, I was even more excited when I saw that Momofuko Milk Bar shared the recipe for their beloved cornflake-chocolate chip-marshmallow cookie with Martha Stewart.
Whether you only get through the first step of toasting the cereal simply because you munched on it, burning your tongue in the process as it immediately came out of the oven. Or, because you baked the entire batch and gorged yourself silly and baked another batch to bring to a dinner party. Regardless of the outcome, you will see how addictive these crispy, gooey, buttery goodness of a cookie are. Get going! Bake these babies up and forget those useless resolutions you just made.

Holiday Entertaining with Whole Foods + $50 GC Giveaway

I don’t know about you but when it comes to entertaining it can be stressful worrying about all the details, making sure you have special diets covered, yummy food to serve and overall, happy guests! Keep it simple and let Whole Foods do the some or all the work. 


Last week I created a yummy cheese board that impressed out-of-town guests as they arrived. It was a nice afternoon treat as we caught up and enjoyed one another’s company. 

While shopping I asked the cheesemonger for advice on how to create a memorable cheese board, she walked me through the cheese case and gave me some great advice! 

Tips for  How to create a cheese board: 
• Pick cheeses of contrasting textures and flavors: creamy, firm, sweet, pungent. 
• Offer at least one cow, sheep & goat’s milk cheese.                                               
• Contrast Old World cheeses with New World selections.
• On a budget? Buy one or two fantastic cheeses, rather than five or six so-so options.
• Two ounces of cheese per person is a good rule of thumb.
• Let sit at room temperature for 30-45 minutes before serving for optimal flavor.

• Serve with bread and crackers for different textures and flavors to accent the cheese. 


 “Easy, breezy, wine and cheesy” pairing and entertaining ideas:


o   Roger d’Anoia Cava ($9.99) – A great crowd-pleasing, Spanish sparkling wine that’s ripe, round and perfect for toasting. Pair with a smooth, semi-firm Uniekass Parrano cheese.  
o   H & G Priorat ($13.99)– A spicy, dusty nose with aromas of red fruits, orange peel and licorice lead to a full-bodied and complex palate. This Spanish red has a silky feel and long finish and pairs perfectly with Guillateau Fromager d’Affinois ($15 per pound).
