Butternut Squash Tortellini

So, I am on a huge kick right now with butternut squash. Whether I roast it, have it as soup or have it pillowed in by delicate dough I am in food heaven! A few years back my friends and I went to dinner at Pomodoro in Orange County. I ordered the butternut squash with browned butter and I couldn’t savor each bite enough. This recipe is my take on the unforgettable sensation that graced my pallette.
Butternut Squash Tortellini
1 butternut squash, approximately 2 pounds, cubed
(I bought the pre-cubed bags from Trader Joes)
2 tablespoons extra-virgin olive oil, plus 2 tablespoons
1 1/2 teaspoon herbs de Provence
1/2 teaspoon kosher salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
2 large shallots, chopped (about 1/2 cup)
2 garlic cloves, chopped
1 cup whole milk ricotta cheese
4 small amaretti cookies, crushed (about 1/3 cup) I used extra on the finished product.
1/4 teaspoon ground nutmeg
1 package small wonton wrappers
Brown Butter Sauce
3/4 cup butter (1 1/2 sticks)
2 tablespoons torn fresh sage leaves
1/4 teaspoon kosher salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1/3 cup grated Parmesan cheese
To make the tortellini, preheat the oven to 375 degrees F. On a foil-lined baking sheet toss together the butternut squash, 2 tablespoons of olive oil, herbs de Provence, salt and pepper. Bake in the oven until soft and golden, about 25 minutes. Meanwhile, heat the olive oil in a small saute pan over medium heat. Cook the shallots and garlic until lightly golden, about 3 minutes

In a food processor, combine the butternut squash mixture, the shallot mixture, and the ricotta cheese and pulse a few times to blend. Add the crushed amaretti cookies, the nutmeg, and sprinkle with salt and freshly ground black pepper. Pulse until smooth.

To make the tortellini, lay out 6 wonton skins, keeping the remaining skins inside the package or under a very lightly dampened paper towel

Place 1 tablespoon of squash mixture in the middle of each skin. Dip a pastry brush in a little water and wet the edges of the skin
Gently fold the square wrapper into a triangle, making sure the edges are securely closed and there are no air pockets inside. Dampen the two bottom corners of the longest side of the triangle and gently bring them together, pressing lightly to secure

Place the formed tortellini on a baking sheet and cover with plastic wrap. Before laying out another 6 wonton sheets, be careful to dry the work surface. This will help keep tortellini from sticking to the baking sheet.

I look the hell, but I was having so much fun!

To make the sauce and serve, bring a large pot of salted water to a boil. Meanwhile, melt the butter in a large, heavy skillet over medium heat.
Add the sage and let cook until the butter starts to brown, about 3 minutes. Turn the heat off and season with salt, and pepper.
Stir to combine. Then, gently place the tortellini in the boiling water and gently stir. When they begin to float they are done, about 3 minutes. Using a slotted spoon, gently spoon the tortellini onto a serving platter, Top with the brown butter sauce, sprinkle with Parmesan cheese and serve.

The finished product! I am so proud and it was even more tasty than I remembered!

Finding My Lost Love. . .Cooking.

I created this blog not only to show our lives as newlyweds but also to document my two other loves; food and my family. For many that really know me they know that my dream from as far as I can remember was to go to Culinary Arts school. During high school I had looked into: Johnson and Whales, Le Cordon Bleu and the CIA. However, I quickly realized that financially I would not be able to spend over $30,000 on my education. I decided to take the alternate route and head to my local JC, where I would eventually transfer to CSUSB to earn my B.A. in English. Through this time (of a hellish six-and-a-half years) I put cooking on the back burner and stuck to making fabulous holiday dinners with my Dad. My Mom describes my cooking as, “never making anything normal and simple”. Which I would have to agree with. My television is always on the food network as it has been since the channels beginning days. I never write a recipe down and barely look one up unless its baking. I have a niche for remembering what my fav celebrity cooks are whipping up and I have even written Emeril a hate note (this was when I was in the seventh grade). I collect cookbooks so they can sit on my custom cookbook bookcase my Dad built in my kitchen, but only as trophies to collect dust and to reflect on who I have met while on their book tours to Williams Sonoma. My life revolves around food and making others happy by endulging into my cooking. I wish to share with you my journey as I find that lost cook who loves nothing more than a good day’s food (but simply re-vamped of course!).

The Meaning of a Child

How do you express in words the feelings that one experiences during the birth of a child? For me, I have been through three. . .and not my own! My sister has three beautfiul babies; Ethan 4, Makayla 3, and Madelyn 1. I was involved throughout every step; doctor’s visits, cravings, mood swings, sonograms, and being lucky enough to be in the room when they entered this world. The reason why I am on this subject is because my dear friend Cassie just flew home a week ago to be a part of her first nieces birth. After being six days past her due date Chloeigh finally came into this world via C-section as she was face down. Cassie wrote me today expressing the feelings that overwhelmed her while in the waiting room and being with her sister throughout every step. It got me thinking about my sister and how proud I am of her and how strong she has been. My youngest niece Maddie just turned one on Monday and it reminded me how one-year ago I was going through the same emotions as Cassie but, seven years ago I was mourning my Grandmother’s passing. I guess you forget the intial feelings as the kids get older and you focus on newer, exciting things. Having Cassie share her new emotions rekindled some of mine, and made me realize that the reason why I smile at my nieces and nephew the way I do is because I will never forget the day they changed my life; the day they were born and the way they call me “auntie”.

My First Blog!

Okay, so I have been contemplating blogging for a long time and I never thought that I would want to be a part of another addictive source. However, I need a “grown-up” medium for me to vent to and to share our lives. I guess what I am saying is that I “think” I am ready to stray away from myspace. I know for some this may be a shock, but you know, I am over it. Today, I saw my friend Danielle’s bulletin and she said “hello friends, goodbye friends”. I sat there and really started to think about her message. I have been on myspace since the beginning, and I mean the beginning. I spend countless hours staring at my page and other’s. I have re-connected with many high school friends and continue to stay connected with many friends that I no longer see on a regular basis. However, I have lost friends because of the site. During my many hours of “lurking” I begin to feel left out, sad, angry, etc. Because those friends that you classify as your “top friends” turn out not be your friends at all. Now, I’m not saying that I don’t still love all my friends but since we have gotten married things have changed. Some may say it’s because of me, but I have to defend myself. I can go on for hours but I have to just get it out there that I am moving on. I will be changing many things within my life and I look forward to sharing all the new wonderful things through my blog.
