Pay-Pay got her Ear’s Pierced

and Daddy doesn’t technically know yet, oh! is Mommy gonna be in trouble. Auntie and I headed to the mall today to have lunch and we stopped by the jewelry store and decided to get it over with now. I know it’s a cultural thing so don’t judge me. My Mom had waited until we were old enough to make the decision and I had it done at the age of eight, I was mortified. Today, I was mortified as the gun went off because it was like me sitting in her position all over again. I know I made the right choice because she will not remember the pain, she literally cried as the earring entered her ear and then calmed right down. I am happy with them and how she handled it and will be more pleased once people stop asking if she is a boy. Plus, it’s just another accessory I can put on my beautiful baby.

I was telling her as we were leaving the mall that this means she can accessorize more and she gave us this smile. Every woman loves to accessorize no matter what age!


I have to add that Jim and I have discussed getting her ears pierced and he agreed upon this decision, he just didn’t know I would do it today.

My customized meal plan

Below is what I am following this week as a meal plan. There are times where I don’t follow it completely, like always having berries or if I don’t have almond butter I use peanut butter. Take Monday for instance, I can get a bowl of cereal down but it is unrealistic to cook myself an omelet when I am taking care of the baby, but there isn’t just a cereal option. You have to do what works for you, tweak it here and there. I hope this will inspire some to start a plan of their own. Also, if anyone would care for a recipe let me know and I would be happy to e-mail it to you.

Mexican Pizza

So I am an idiot and deleted all the pictures off of my SD card because I thought I had uploaded them all and apparently I failed to do so. On Saturday I made Jillian’s Mexican Pizza recipe and it was so freakin‘ good. I guess you will just have to read the recipe and trust me that it was good without any visual temptation.

This recipe is for 1 Serving :

364 Calories, 37 g Protein, 12 g Total Fat

Ingredients

  • 1 tortilla(s), whole-wheat, low carb, 6 1/2-inch
  • 3 ounce(s) chicken, breast, oven roasted, skinless (I used regular chicken tenders and sauteed them with a little cooking spray)
  • 1/4 cup(s) salsa, mild
  • 1/2 cup(s) pepper(s), red, bell, chopped
  • 2 tablespoon pepper(s), green Chile, diced (I used canned)
  • 1 cup(s) spinach
  • 2 tablespoon cheese, mozzarella, shredded, low sodium (I used Mexican cheese blend)
  • 1/4 cup(s) avocado, sliced

Preparation

Preheat oven to 425 degrees. Spray baking sheet with non-stick spray and place tortilla on the sheet and cook for 10 minutes until crispy.

In a skillet over medium heat add bell pepper, green Chile’s and spinach to pan. Cook until spinach is wilted.

Spread salsa on tortilla and top with chicken and spinach mixture. Sprinkle with cheese and bake until cheese melts. Top with avocado slices and slice into fourths.


I made three of these, two for Jim with salsa Verde and one for me with traditional salsa. Jim loved it as did I, even though I could only eat 3/4 because it was so filling. I guess that’s good right?

Weigh-In Wednesday

I have to say that I feel 95% better than I did two weeks ago (duh! releasing endorphins does help) but there is still a part of me that is still kind of down about the way my body looks. I can feel the fat go away and some parts tightening up, maybe if I just remove every mirror I won’t have a complex (or getting into a pair of non-maternity jeans might boost my confidence)! Jim actually told me last night that it makes him sad every time I look into the mirror, he truly loves me for who I am, stretch marks and all.

I was kind of bad last week and didn’t completely log my food intake as I had planned. I pretty much followed Jillian’s food plan with a few exceptions when I was out. I have made it a point to eat breakfast every morning and to get my snacks in to jump start my metabolism. Next week I will have a full food log.
As for my workouts, I made it to the gym five days last week (mon, tues, wed, fri and sun). In addition to my gym time I managed to: walk the mall on Tuesday with a friend for a few hours, Wednesday Payton and I headed out to the Carlsbad outlets walking for two hours and on Thursday I went jogging with P and the pup for thirty minutes. I also fit in a few workouts on my wii.
I do feel proud of myself. I feel stronger. I feel like a better wife and mother. I know I can do this and keep up with it. I love the results I am already seeing, because I see the old me shining through.
My weekly stats:
Weight: 166 – down 4 pounds, right on track for my two month goal
BMI: 26.75

Lions, Flamingos and ‘Raffe’s. . .Oh My!

Today Payton and I took advantage of the gorgeous San Diego weather and headed to the wild animal park with our friends. What’s great about the wild animal park is that it is literally fifteen minutes from my house and now we have an annual membership so we can go walk the park or zoo whenever we want. It always amazes me how vast and beautiful the San Pasquel Valley is. Below are a few of my favorite pictures from the day.

My very happy baby. Don’t you just love her chubby cheeks and double chin.





Gorillas are always a favorite of mine and Jim’s. One of the first classes we took together as a couple was Anthropology and we had to do a Gorilla observation for three hours at the zoo. Seeing them always beings me back to the good ‘ole days of 2001.

I bought Payton and her friend Chloe matching ‘raffe’s to remember their first meeting and P’s first trip to the park. (Chloe is my dear friend Cassie’s niece. Her mama Kris and her are visiting from Washington state this week).


The last picture of the day. She was an angel all day. Love my sweet baby girl.
