Brayden’s Room Update.

My sweet little fifteen month-old finally has a completed room. In our previous house his nursery wasn’t ready when he was born because of arriving three weeks early, it took us a few weeks after his arrival to get everything finished. When we moved only a few short months later I was sad because we had just finished his room. The new room was bright blue and slightly matched his bedding. Jim wanted to keep it, I wanted it gone immediately but we waited until September to paint his room. This room is bigger than the last and has more wall space so I was struggling with things for the walls. I used everything from his last room but added a Lady and The Tramp piece that the aunt & uncle gave us and made a chevron canvas for over his crib. It makes the room, I just love how it turned out and it adds an extra touch of sunshine! The only thing we need to add is a rug and change out the horrid single can light that makes his room an interrogation room at night. 
Still need a rug, most likely purchasing this one.

Game Day Snacks w/ Tyson #mealstogether #CBias

Being a San Diego Chargers fan we seldom get to enjoy playoff season and if we do make it to the playoffs…well, it’s not even worth mentioning. You know we always blow it, reference our 2006 season for a reminder. Maybe one day, a girl can wish right? Just because our Chargers fall short doesn’t mean that we stop watching football and playoff season is just as exciting as the big game! 
I am eagerly anticipating the big game in a few weeks. I love everything about the event: the commercials, the people we watch the game with, the half-time show, the quarterly scoreboard pool, and the food! I am usually in charge of bringing appetizers and desserts so I decided to throw a playoff party to test out a few apps before the big day arrives!  
This past weekend the family and I watched the playoffs. I wanted to make some appetizers that would please everyone. I chose an array of simple food, the key to throwing a successful party is to think of everyone attending. The spread doesn’t need to be outlandish, but impress your friends and family with appetizers, a simple dessert and ice cold beer is a must! For our get together I included: Tyson tequila lime wings with homemade gorgonzola dip, baked buffalo turkey meatballs, savory clafoutis, caramelized onion dip, blondie bars and our favorite craft brews. 
Displaying your food: Use white serve ware, it will make your food pop! I made a simple felt field, I found some inspiration here. I opted for chalk marks to make the field look authentic. I also added a plastic football I found at the cake supply store. When displaying your food don’t overcrowd your plates, the food will not look appealing. You can always add more once your guests have savored what’s out. Use simple garnishes you already have in your refrigerator, take the wings for instance, I used a few leaves of romaine and celery sticks are always a must! 
It would be sacrilegious not to serve wings at a football party, it’s kind of like “who came first the chicken or the egg” scenario. I picked up some Tyson wings while at Sam’s Club. There were a few options for sauces: buffalo, honey BBQ or tequila lime and I went with the tequila lime. I knew the wings would be perfectly seasoned and I could serve buffalo and BBQ sauce on the side for guests to dip them in. It was a great choice because they came out crispy (the only way I’ll eat them), perfectly seasoned and the kids were able to eat them because they weren’t spicy. I served the wings with my gorgonzola dip and crunchy celery sticks. 
Baked buffalo turkey meatballs, for the non-wing lover like me! These meatballs pack all the classic wing flavors into one savory bite! The advantage? Their not messy!                                                                

Savory calfoutis are such an easy appetizer. The light and airy egg cups are a crowd pleaser and you can virtually place whatever you have on hand in them. My favorites are: green onions & sharp cheddar, gruyere and bacon and dill & swiss. The kids and adults alike will gobble these up! Plus, they’re great as leftovers for breakfast the next morning.

We all know it and we all love it! French onion dip is a staple for any get together but why not mix it up and make caramelized onion dip from scratch? It’s super simple and will show your guests you added a special touch to your game day spread. Serve with crispy potato chips. 
 
Some might forget to add dessert but it’s nice to add something simple. I chose semi-homemade blondie’s with milk chocolate chips and walnuts. It was the perfect ending! 

Throwing a party doesn’t have a be hard. Throw in some frozen appetizers, semi-homemade and homemade items and you’ll thank yourself later. Make your grocery lists and bring your recipes with you or have them saved in your smart phone to easily reference. I headed to Sam’s Club for my shopping trip because I knew I could get everything I needed in one place. You can see my entire shopping trip here.

Game day is mainly about the food, well, for me anyhow. It just makes the game that more exciting plus it brings everyone together. Another fun game our family likes to do on the big game day is by playing a quarterly scoreboard pool. You have a scoreboard grid (below) and everyone picks as many squares as they want at $1 each. Once everyone has picked their squares, Uncle Al will pick numbers out of a hat (0-9) and places them on the x/y axis. At the end of each quarter you take the last digit of the score for the NFC and AFC, the initials on that box wins! In our case it’s always ninety-one year-old Grandmom Phyllis. She always wins big!

dealing with packed up emotions

Over the weekend I finally unpacked my Grandmother’s china that has been sitting next to my washer and dryer for five years prior to moving. I never had the ample space at the old place and when we moved into our new home I knew that a nice buffet was needed to finally unpack the delicate pieces. We purchased our buffet but the boxes just sat in the garage, a constant reminder that they needed to be unpacked. But I couldn’t. One of my resolutions this year is to get organized and the garage was one promise I made to Jim so he could add a bowflex to the third car garage. We spent a weekend sorting through high school and dating memories. Finally tossing away the crap that had accumulated throughout our first twelve years. The next area to organize was the china. I truly could not bring myself to open the three plastic tubs and two cardboard boxes, that was until Jim left for his business trip on Sunday. When we got home from the airport I took a look at the boxes and said screw it, let’s get it over with. You’re probably wondering why such a long drawn out story over some old plates. But it’s just that. Old = memories and memories = dealing with emotions I have been avoiding. I cracked the first blue lid, gently picking up the first slightly melted bubble wrapped Bavaria Tirschenreuth 647 plate and it was like I was transported to 2003. I had packed my Grandmother’s china cabinet when we rapidly packed her house after the Turk family decided her and my Grandfather should no longer be. The packing was done at such a fast rate to ensure certain people did not get their hands on cherished family heirlooms and the china that I had been promised early on. I remember my Grandma watching over me like a hawk ensuring I was wrapping them correctly, that they weren’t too tightly packed and when the twenty rolls of bubble wrap weren’t enough I ran back out to purchase more. It was hard for me wrapping up her house, many items she would never see again, and in her eyes I knew she knew the same. Taking the china out piece-by-piece Payton would ask about the pieces, bringing me back to the last time we dined on gorgeously pink plates and the happy times of my childhood. And when the small apple dishes were discovered I immediately thought of her pill dish that still remains in her room at my parents. As I unwrapped and unwrapped I kept thinking to myself that my Grandma is probably watching over me thinking I am not being as careful as she would like for me to be. I confronted the emotions, I feel better (slightly) and now I look forward to throwing a fab tea party for my daughter one day. I can see gorgeously plated food for guests and photo shoots. Now, here goes to praying that the kids never crack the doors open and break a single piece!

I was also gifted china from my Grandma B (Dad’s side). My Aunt started giving us piecing on our first Christmas. It’s so unique.

getting lunchtime back on track with #frozenfavorites #CBias

It’s no secret that I got to my goal weight last year, I think I have shouted it from every rooftop but it’s something I am more than proud of. When I began my weight loss journey I started it with the 17-day diet, once I got to the third and fourth cycles I found myself struggling to find lunch options that would help me stick within the guidelines. I turned back to an old friend that previously helped me lose twenty-five pounds when I was finishing school. Life gets busy and honestly having two children there are many days where I just snack on whatever their eating so turning back to Lean Cuisine for an easy and relatively healthy meal has helped me get back on track. 

The thing with Lean Cuisine is that I can always find a frozen entree for a replacement restaurant quality meal with half the calories and fat, plus it’s a lot friendlier on my budget. I used to never stray away from the baked chicken, potatoes with broccoli and pasta favorites. Until recently when I found that Sam’s Club offers a six-pack of Asian inspired and a four-pack of Italian favorites entrees. The chicken teriyaki stir fry is one of my favorites so seeing the special New Year pricing of $9.98 for six entrees and $6.98 for four entrees was more than appealing to get my lunchtime routine back on track.

Being that we’re a few weeks into the New Year that means that my hubby is back to full-fledged traveling again. I decided to stock-up while at Sam’s Club (you can see my entire shopping trip here) for those days where it’s near impossible to cook three meals. I also picked up fresh fruit for snacking, some breakfast staples and some Skinny Cow’s because the value was too good to pass up!

We’re half way through the month and we’re already on our first business trip of ’13. It was so easy for me last night to whip up a staple side salad, spinach and golden raisin (recipe below), which is one of my favorite salads from my previous job. I served it alongside the ginger garlic stir fry for me and the kids had the spaghetti and meatballs, it was the perfect complete meal! I was so happy with my entree, especially when the entire meal was ready in under fifteen minutes. The colorful array of veggies had my palate ready to dig in, the rice was perfectly cooked and the sauce, well, lets just say I am still dreaming of the ginger garlic sauce. 

The spaghetti and meatballs was a crowd pleaser for the kids. Brayden gobbled up two meatballs and noodles within minutes and Payton exclaimed a “yippee!” when she heard she was having her favorite for dinner. I have never seen her clean a plate as fast as she did last night and honestly it’s nice that a frozen entree was enjoyed by both children. 

The kids also had some of the veggies from my meal, they were also gone within seconds. As we finished our Sunday dinner I felt like I was putting them to bed with full bellies of a well-balanced meal. Feeding the kids and I while daddy is away on business is usually stressful for me, lunchtime also gets crazy. So turning back to Lean Cuisine just helped makes things a lot simpler! 
Being that I was a restaurant general manager recreating restaurant meals is one of my favorite things to do. My spinach and golden raisin salad is my spin-off of a sun dried tomato, spinach and goat cheese salad. Make the salad to fit any portion. 
Ingredients:
spinach
red onion, thinly sliced
dry roasted pepitas 
feta cheese 
golden raisins
sun dried tomato vinaigrette (homemade or store-bought) 
The kids and I capped off our tasty meal with these indulgent babies. Skinny Cow ice cream sandwiches are my go-to for any sweet tooth craving. If you haven’t tried Skinny Cow ice cream sandwiches you truly are missing the best ice cream sandwich that’s on the market. I love the cookie, I almost prefer the cookie more but since the ice cream is there I might as well enjoy it. My momma always taught me not to be wasteful. But seriously, they are by far my favorite. The ice cream is creamy, the flavors are spot on and the cookie is never soggy. Such a great ending to a peaceful and relaxing weekend.
